A wise man, Charles Dickens. Although, I will be so bold as to say that not all biscuits are created equal. I do not doubt his dangerous confrontation nor the stealthily manner through which those sugary ninjas encroach one's lips. I daresay if Mr. Dickens had an encounter with these orange and thyme biscuits, he would have finished his thought with, "...and I minded not one bit."

Orange and Thyme Biscuits
Time: >1 hour
Yields: Approximately a dozen and a half biscuits

4 cups all-purpose flour
2 large eggs beaten + 1 egg for egg wash
1 1/2 cups cubed cold unsalted butter
1 1/2 cups buttermilk
2 tablespoons baking powder
1 teaspoon baking soda
2 tablespoons granulated sugar
2 teaspoons kosher salt
2 teaspoons fresh thyme, chopped
Zest of one orange
1/2 cup of orange juice
About 20 sugar cubes

1. In a large bowl, whisk together flour, baking powder, baking soda, sugar, salt, thyme, and orange zest.
2. Add of the eggs and buttermilk, stirring to combine.
3. Place the dough in the fridge for 30 minutes to rest. Meanwhile, preheat your oven to 450* F and prepare a baking sheet with parchment paper or silicone mat.
4. On a well-floured surface, roll out the rested dough until it's about 3/4" thick. Use a biscuit cutter (we like our 2 1/2" size) and cut out the biscuits and place onto a baking sheet.
5. Pour the orange juice into a bowl. Take one sugar cube, dip it into the juice and press into the center of a biscuit. Repeat these steps for each remaining biscuit, so that each biscuit gets a juice-dipped sugar cube. 
6. Bake for 12-15 minutes, or until biscuits are lightly browned.
7. ENJOY these sugary-orangey-thymey ninjas!
